calzonesI use a mixture of the two recipes below (mostly depending on whether I want to make my own crust or not). I just guesstimate the filling amounts and put in whatever fillings I'd like. calzones 1Nonstick cooking spray or shortening 1 10-ounce package refrigerated pizza dough 1 cup shredded cheddar cheese (4 ounces) 1 cup shredded mozzarella cheese (4 ounces) 1/2 cup ricotta cheese 1/4 cup grated Parmesan cheese 1 cup chunky pasta sauce or one 8-ounce can pizza sauce 1. Preheat the oven to 400 degree F. Line a 12-inch pizza pan with foil and lightly coat with cooking spray, or grease with shortening. Press dough onto foil in pan, forming a 12-inch circle. 2. In a large mixing bowl stir together cheeses. Spoon cheese mixture on 1/2 of the pizza dough. Fold dough over filling to form a half-circle. Seal edges, then use the edge of a spoon to make a decorative edge, if desired. Cut slits for escape of steam. 3. Bake in the 400 degree F oven for 18 to 20 minutes or until filling is heated through and cheese is melted. Cover with foil after 10 minutes of baking to prevent overbrowning. Cool on pan on a wire rack for 5 minutes before serving. 4. Meanwhile, in a small saucepan heat pasta or pizza sauce. Serve the sauce with calzone. Makes 4 servings. calzones 21/2 pound bulk Italian sausage 1/4 cup fine chopped onion 1/4 cup fine diced mushrooms 1/3 cup pizza sauce Quick Calzone Dough (below) 1 cup shredded mozzarella cheese 1/4 cup grated parmesan cheese Heat oven to 450ºF. Cook sausage in skillet until browned, then drain. Stir in onion, mushroom and pizza sauce; keep warm. Prepare dough. Layer mozzarella cheese, sausage mixture and parmesan on half of circle to within 1" of edge. Brush edge of dough lightly with water. Fold dough over filling; press edge with fork to seal. Brush with egg white. Bake about 15 minutes or till golden brown. Cool for 5 minutes. Cut into wedges. DOUGH: 2 c. Bisquick®, 1/3 c. hot water (120-130ºF), 1 tbl oil. Mix all until dough forms. Place dough on surface dusted with Bisquick; roll in Bisquick to coat. Knead dough 15-20 times or until smooth and elastic. Roll into 12" circle. Place on ungreased cookie sheet. Serves 2 |
